Warmed up water temp?

What should the warmed up water temp be?
Got a water temp gauge installed and temps seem to be a bit strange.

City driving with very little turbo assist temp stays around 80C
Motorway driver with some turbo assist temp gets up to 90C
Sitting at lights gets up to stays between 95C-100C where the fan turns on and off.

Stock gauge stays in the middle the whole time.

Where is the sender for your temp gauge?

Stock location for stock gauge.
Just after thermostat for the after-market gauge.

The stock gauge takes the temp on the engine side of the thermostat, so doesnt change much, your gauge is on the radiator side by the sound of it, so will change with the thermostat opening and closing and the fan turning on and off. The temps you listed sound about right, my factory gauge NEVER gets above about 1/3, I think its poked.
